Die schönsten Parzellen mit alten Rolle-Rebstöcken wurden ausgewählt und reserviert, um diesen Courtade Blanc zu produzieren. Die Trauben werden sehr früh in der Nacht geerntet, um ihre Frische zu bewahren und sie vor Oxidation zu schützen. Der Zeitpunkt der Ernte wird genau gewählt, um eine perfekte Reife anzustreben.

Eine goldene Farbe, ein Bukett von Passionsfrucht und weissen Blüten lässt elegante Röstnoten erkennen. Am Gaumen herrscht ein Gleichgewicht zwischen der durch den Ausbau verliehenen Rundheit und der natürlichen Frische der Trauben. Der salzige Abgang zeichnet diesen Wein aus und verweist ihn auf sein Terroir. Die Rolle (Vermentino)-Trauben, die an den ältesten Rebstöcken des Weinguts reifen, werden in 400-Liter-Fässern vinifiziert und ergeben einen komplexen, straffen, subtil holzigen Gastronomiewein mit einem schönen, langen Abgang.
