Dies sorgt für schöne Klingenoptik und hat ganz praktischen Nutzen. Durch die Unebenheiten der Hammerschlagvertiefungen entstehen beim Schneiden kleine Luftpolster, die das Ablösen des Schnittguts fördern und das Arbeiten mit dem Messer erleichtern.
