Das Weingut Emidio Pepe macht ebenso wie auch Valentini homöopatische Mengen ihrer extrem gefragten Weine. Die alten Reben des Weinguts sind in der Pergola Form angepflanzt, die Trauben wachsen also über Kopf.

Bei Emidio Pepe ist die Zeit wahrhaft still gestanden und nach der Handlese werden die Trauben ebenfalls von Hand entrappt und dann mit den Füßen im kleinen Holzfass getreten und angequetscht. Natürlich mit wilden Hefen und ohne Zusätze jeglicher Art vergoren. Vom Trebbiano gibt es zwei Versionen, die erste aus jungen Reben kommt früher auf den Markt und wird eigentlich ausschließlich in Italien verkauft. 

Hier haben wir aber den Trebbiano aus alten Reben, der in kleinerer Stückzahl gemacht wird. Er braucht einen Moment im Glas, aber schon nach wenigen Minuten geht die Reise los und die zarte Reduktion wandelt sich in reife Aprikosen, Williams Birnen Salbei und duftenden Jasmin Blüten. Das ist wilder und unbändiger als die kristallinen Weine von Valentini.

Im Mund hat der Wein eine zarte und erfrischende Haptik. Steinobst, gelbe Äpfel, Kamillen Blüten, Zitronengras, Ingwer und Zitronensorbet schwappen elegant und doch so nachhaltig über die Zunge. 

Der Wein hallt lange nach. Einer der großen italienischen Weißweine.
