Wie wird schwarzer Knoblauch hergestellt?

Beim schwarzen Knoblauch handelt es sich um den normalen weißen Knoblauch, der auf natürliche Weise in einem aufwändigem Verfahren fermentiert wird. Das bedeutet, dass die Knollen rund 90 Tagen einem zyklischen Temperaturschwankung von 70 bis 25 Grad und einer Luftfeuchtigkeit von 80 bis 90 Grad ausgesetzt sind. Dabei werden Zucker und Aminosäuen des Knoblauchs durch den Gärprozesse umgewandelt die für die schwarze Farbe veranwortlich sind.

Gut für die Gesundheit

Schwarzer Knoblauch beinhaltet B-Vitamine und ist ein sehr guter Proteinlieferant. Eine schwarze Zehe hat in etwa die 10 fache Wirkung wie eine normale Zehe weißer Knoblauch.

Geruchslos

Durch die Fermentation und den dadurch enstehenden Gärprozesses geht der typischen Geschmack verloren. Er ist fast geruchslos und erzeugt keinen Nachgeschmack, auch KEINEN MUNDGERUCH, kein Sodbrennen, Blähungen oder körperliche Ausdünstungen.
