A direct pressed wine rather than made from a bleed off (saignée) of a red fermentation. The grapes are picked at optimal ripeness and then held in the press for a few hours to gain the desired amount of colour and tannin and then pressed to tank for clarification and fermentation. Different yeast are used to provide complexity and cool fermented to enhance aromatics. This wine is made in lower acid style making it very approachable and food friendly, and is bottled early to retain its vibrant aromatics.
