WINEMAKING
The fruit was harvested in the cool hours of the early morning. Upon arrival at the winery, it was gently crushed to static fermenters and inoculated with a cultured yeast. Pump-overs were carried out twice daily for aeration and the extraction of colour, flavour and tannins. Following pressing, the wine was racked to French oak barriques to complete malolactic fermentation (MLF). Once MLF was dry, the wine was racked and returned with SO₂, where it matured gracefully.
