The fruit is harvested at optimum ripeness , gently pressed and run to stainless steel tanks. Fermentation occurs at cool temperatures with selected yeast to enhance aromatic expression and flavour complexity. After fermentation the wine remains on light lees to enrich the mouthfeel, before blending and bottling.
Food Pairing: A great match with a variety of foods including seafood , chicken and pork, as well as our favourite, a chilled peach.
