WINEMAKING
The fruit was selectively harvested and pumped into the fermenter with many whole berries intact. The cool temperature of the fruit allowed for a slow start to fermentation. Once inoculated, the ferments were pumped over and plunged twice daily, with the temperature maintained around 25°C to prevent over extraction of tannins from the skins. The wine was then transferred to barrel for malolactic fermentation, allowing for a soft integration of grape and oak tannins. After the desired period of barrel maturation, the wine was fined and then bottled.
