Botzonian, the two coffees we’re releasing today are our two final releases roasted on the machine that got BOTZ started – Jobo. It’s his last hurrah. And we’re feeling sentimental.

Have you ever thought about the feelings of your seemingly inanimate possessions? It could be our robotic persona, but BOTZ is quite empathetic regarding machines. We have names for our favorite appliances. When they move on from our lives, we feel a deep sense of gratitude and respect (anyone else cry when their childhood oven got replaced?).

We’ll never forget the day that we hit our stride with Jobo. As curious roasting folks, we would politely change different variables that Jobo controlled (damper settings, fan revolutions, drum rpm, peak gas…yes, Jobo is quite versatile despite his smaller size!) to try to find a roasting style we valued and wanted to share. Our dream was ripe acidity with reverberating finishes. We tweaked, tasted, and tweaked some more. And then Jobo showed us his true form, and the beans started singing in a way that gave us a new level of confidence. We had found our own voice in roasting thanks to Jobo, and, in our robotic opinion, it leaned loud.

Soon, BOTZ will start its own UG-15 journey with our new roasting machine pal named Dragoljub (a nod to my Deda who always wanted to start a hotdog cart). While we’re always a bit nervous about learning a new roasting system, our journey with Jobo has shown us that the best things require patience and dedication. Because of Jobo, we’ll be ready.

The last two coffees couldn’t be more fitting for Jobo’s personality and style. We usually provide cup characteristics, flavors, and feelings in our descriptions. But for these last two coffees, we’d like to describe the roast in honor of Jobo. Here’s how Brayan Joven’s coffee road the wave in Jobo’s drum.

There is no variety in the history of BOTZ that Jobo enjoys roasting more than pink bourbon. He’s seen so many different types that he feels particularly comfortable when a new lot drops through his hopper. Jobo found Brayan Joven’s pink bourbon to match previous experiences with the variety. He leads with moderate gas to extend the roast length a touch, where he finds pink bourbons to be their best. Like with most roasts, he starts to step the gas down, but he chooses not to micro-manage the roast with mini steps. Instead, they’re a bit larger and less frequent. Jobo knows that no pink bourbon is the same at first crack. After a few test roasts, he finds that the optimal setting is early and soft. The beans start with a very faint crack, and it remains soft and controlled until the end of the roast. Just like some of the best pink bourbon roasts, the beans are wrinkly with a greyish brown hue. In his tenure, Jobo roasted over 20 different pink bourbon lots. Many of them cemented themselves as some of our most memorable coffee experiences. We’ll never forget them, and we’ll never forget Jobo.
