This "Tantetsu Goma" (鍛鉄降魔) mizu-honyaki yanagiba was made in 1995 (the 7th year of the Heisei era) to celebrate the 123th anniversary of Mizuno Tanrenjo. The knife was forged by Mizuno's 3rd generation master, late Akiharu Mizuno, and mirror-polished and hand-sharpened by legendary sharpener Tsutomu Minamiura. About Mizuno Tanrenjo 水野鍛錬所 / Minamoto Akitada 源昭忠

Established in 1872, the Mizuno Tanrenjo workshop is one of the most prestigious blacksmith workshops in Japan. Five generations of Mizuno blacksmiths have worked on projects of cultural significance and won accolades for their craftsmanship. The works of 2nd generation blacksmith Masanori Mizuno still hangs on top of the pagoda at Japan's first UNESCO site, and the 3rd generation Akiharu Mizuno - a portage of Japan's national treasure blacksmith Teiichi Tsukiyama - has won a prestigious award for his honyaki yanagiba. The Mizuno family workshop has received two royal visits by Prince Mikasa of Japan, who is personally a fan of their craftsmanship. Today Mizuno Tanrenjo is led by 5th generation master blacksmith - Jun Mizuno (a.k.a. Noritada Mizuno) whose superior craftsmanship and extraordinary honyaki works have been recognized by two of Japan’s top Ichinomiyas (shrines) which have commissioned his katanas to become the shrines’ permanent collections.

About Mizu-Honyaki 水本焼

Mizu-Honyaki is the highest level of Japanese knife making, involving a differential heat treatment achieved by applying clay mud on spine and hira of the blade before heating and water quenching. Very few blacksmiths have the skills of making quality mizu-honyaki, and the failure rate is very high as any tiny crack during the heat treatment forfeits the entire blade. A fine mizu-honyaki is always costly due to the scarcity of blacksmiths and high failure rate.

Care:

Aogami #2 (Blue #2) steel is a premium Japanese high carbon steel for knife making. Despite some corrosion resistant quality (for a carbon steel), it is not stainless, therefore you should wipe your knife dry after each use. Patina will develop over time. Rust may develop if left in prolonged contact with water or acidic food. Use a rust eraser to clean if rusts develop. Avoid cutting into bones, frozen foods, hard fruit pits.

Cutting Surface:

Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

Sharpening:

Small Investment with Great Results

I'm just getting into making ice cream at home and after doing weeks of exhaustive research, including probably 100 hours of YouTube videos (I know, I have a problem, but the research is for me a big part of the fun), I was ready to set my budget at between $200 and $400 for a compressor ice cream machine. Then I ran across this Dash My Cup Set. I returned to YouTube and after just a few videos I decided that for a small fraction of my initial budget I could "get my feet wet" with the My Cup. Another deciding factor was that the Freezer Mugs were small enough to not sacrifice too much of my freezer space. I've made several batches of ice cream using both the included recipes and some I have found online and I must say, the results have been fabulous. Sure the finished ice cream right out of the machine is a soft serve consistency but after a couple of hours in the freezer you will have ice cream firm enough to form excellent scoops. Just be sure to follow good recipes otherwise you may end up with ice cream hard as a rock. So learning a bit about the science of ice cream is critical for good results. Although the portion size is small, it's actually bigger than I expected. I'm an ice cream lover and sure, polishing off the entire batch in one sitting is no problem but, I am definitely satisfied with the amount. And if you opt for the Set with the extra mug, you'll always have a mug ready for your next batch. Definitely the way to go in my opinion. The My Mug is very well made (as are most of the Dash products of which I have an Egg Cooker and a Waffle Iron) and the motor will turn the dasher through the thickest of recipes. If you overload with mix-ins it might run into difficulties but otherwise you're good to go. Will the My Mug be the "end game" ice cream machine? Probably not. But for a small investment I can experiment with different recipes and see where this new found hobby takes me. And even if I do get a larger, fancier and more expensive machine in the future, I will probably keep the My Mug anyway to test out new flavors. This way I can see what I like without wasting too many ingredients.
