椰花糖來自椰子花的花蜜，是新興較健康的食糖。椰樹開花後，把花剪開便會有漿液流出，這漿液就是花蜜，也是用來長成椰子的營養庫。採集漿液跟採集楓樹糖漿的過程相似。採集後，將糖漿薄薄一層放在盤子裏，加熱烘乾，漿液揮發後剩下地結晶體就是椰花糖。富含維他命 C 和礦物質，果糖與 GI 都較低。
