The G-81 is the fluted knife in the classic Japanese nakiri style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. If your a vegan or have recently taken on a more healthier lifestyle then this knife would be ideal in getting everything cut and ready. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking. You can also opt for a santoku knife which is a good all rounder and is also used by professional chefs for cutting vegetables but also do other stuff in the kitchen. If your looking for more than just a nakiri knife then our set of 3 knives that has been released in addition to this knife for autumn 2019 would be the G-779146 which contains a chefs knife, nakiri knife and a peeling knife. Alternatively if this knife is too big for you at 18cm then you can go for a smaller knife of the same type which is the GS-91 which is also a new knife that has been released this autumn 2019 which measures at 14cm.
