Not all coffees peak at the same moment—some are ready to brew just a few days after roasting, while others benefit from a longer rest. That’s why we tailor each shipment based on the specific coffee and your delivery rhythm, aiming to get it to you right when it's tasting great.

That said, there may occasionally be coffees in your order that are up to 6 weeks off roast. This is typically intentional, especially when a coffee benefits from extended rest or comes from a limited roast schedule. Rest assured, we only send coffee we believe is showing well and ready to enjoy.
