WINEMAKING
The fruit was harvested in the cool hours of the early morning. Upon receival at the winery, it was delicately crushed into static fermenters and inoculated with a cultured yeast. Pump-overs were conducted twice daily for aeration and the extraction of colour, flavour and tannins. After fermentation, the wine was racked into French oak barriques and allowed to mature gracefully until September 2025. It was then blended into a tank and allowed to settle before filtration for bottling.
