This is our fifth time featuring José of El Casino. His coffees are always some of our favourites from Huila, Colombia. This Pink Bourbon is floral and delicate, presenting itself with a light body and a sweet honeysuckle finish on our cupping table.

In the cup
We taste gentle citrus like bergamot with the aroma of lemongrass. This Pink Bourbon has the delicate and sweet florality of honeysuckle. The coffee has a light body and a delicate floral finish.
About The Producer
José and his wife, Francy Helena Inga, have been farming coffee for many years. While José grew up in a coffee farming family, he left home at a young age and worked all over Colombia as a bus driver. In the last two decades, he decided to return to his roots and bought El Casino in Sinaí, Palestina. Today, he and Francy manage 10 hectares, five of which are planted with several varieties of coffee including Caturra, Pink Bourbon, Gesha and Tabi. José and Francy also have a huge soft spot for abandoned dogs and have given a home to dozens over the years.
Processing
José is incredibly meticulous during each stage of processing, from the growth of his trees to the drying of the coffee parchment. The selected cherries are then floated to remove any outliers before dry fermenting for 30 hours and undergoing a traditional washed process.
Variety
Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace.
