Their Pazo de Rubianes wine, made in the heart of Salnés (D.O. Rías Baixas), comes from magnificent vineyards growing the native Albariño variety with a privileged altitude and orientation. 25 hectares of post-phylloxera vines planted on granitic soils and surrounded by more than 800 botanical species, including camellias. Once the grapes have reached optimum ripeness, they are harvested by hand in 15 kg boxes and immediately taken to the winery for cold maceration. Fermentation is carried out in stainless steel tanks at a controlled temperature and then the wine is aged on lees for 3 months with periodic ‘bâtonnage’.

The result is Pazo de Rubianes, a wine steeped in history and born in a unique environment. An idyllic landscape that makes this “wine of the Camellias” unique among the wines of Rías Baixas.
