Technical information :

Grape variety : Cabernet Franc (55%), Cabernet Sauvignon (45%)

Age of the vines : 10 to 20 years

Surface : 1,4 ha

Soil : Sand and clay with pebbles on granite and gabbro bedrock.

Harvest : Selective, by hand, with a yield of 14hl/ha in 2016.

Natural winemaking process :

• 12 days maceration 70% destemmed, 30% in whole clusters

• fermentation through natural indigenous yeasts only, no added enzymes nor bacteria, no fining

• vatting and racking using conveyor belt (better protects the grapes' aroma)

• free-run juice and press juice are blended

• maturation for as long as is necessary !

Sulfite content : SO2 < 5g/hl

Suggested serving temperature : around 15°C
