Located 50 miles north of Dublin, the medieval village of Carlingford is reputed to be the most picturesque village in Ireland. It takes around three years to nurture a fully-grown Fresh Carlingford Rock Oyster. They are first introduced to Carlingford Lough at fingernail size and placed in fine mesh bags. Hand-turned at regular intervals to give the oysters perfect shape and form, the oysters are then handpicked and go through a purification process before distribution.

Live Oysters should be stored in the fridge (not too cold) and enjoyed as soon as possible after delivery. They can last a long time in the right conditions. The Shells must be tightly closed when you shuck them, which signifies the Oyster is alive and good to eat.
