創辦人岡住修兵先生曾在新政酒造就造酵母修行了四 年半，是比其他人更著重釀酒細節的杜氏。2021 年 9 月在新政酒造所在的秋田縣設立了新的酒蔵。
這款酒為岀口限定，是在日本國內無法入手的商品。 另外，即使在香港內，也不是能隨便買到的，所以是超限定流通酒。 使用自然栽培米，因為是少量釀造的關係，所以總數只得 430 支。酒上有它自己的識別號碼。
因為採用生酛的造酒方法，所以較為強勁的酸味正是它的特徵。乳酪般的乳清香，以及木蘭般的芳香。飲用時能感受到濃厚的米味。餘韻較⾧，可以 配合使用芝士或其他乳製品的料理、帶油脂的和牛等。
