是奈良縣唯一的酒造好適米亦是當地推崇品種的「露葉風」、因培植相當困難而曾經途絕種的一款米種、奈良縣内各地的米農各自努力鑽究才令它復活的酒米。是將白露・早生双葉混合的品種、而特徵是比山田錦更大的心白、吸水速度十分快、因此原料處理困難的一款米。
他們的商品基本上全是無濾過・無加水・生酒、有著生酒獨有的層次豐富而細膩的質感、味道立體鮮明是風之森的特徴。只使用自社研發的"7号酵母"。酒香自然、有時候像果實般的香味。
風之森美味的秘訣①、使用能以-10℃冷藏保存、強力的酒桶。經常保持住最適合發酵的溫度、令低精米的酒的味道、高品質出品。
風之森美味的秘訣②、有極小的氣泡的一種特殊的水、「Ultra Fine Buble」水來洗米、把米裡面的多餘過礦物質或蛋白質除去、就算精米步合80％的低精米也一樣優雅柔和、造出層次多變帶點複雑充滿立體感的酒。

Unbelievable! One of the BEST purchases I made. Fits perfectly, wasn’t wrinkled at all. In fact, I don’t need to take it to the cleaners to be pressed. Class all the way. Well made, elegant, fabric was perfect as it was not too thin. Compared to tuxedos in the store and this was exactly the same. Only difference is this suit was $150 less!
