ALPHA系列是為了超越風之森的固有風格，以獨創的技術去尋覓日本酒的不同可能性。
Alpha 8誕生的契機，是源於與奈良釀造的浪岡先生的相遇。他們的啤酒UNDERWATER使用了風之森的酵母、麴和水源。焙煎玄米去釀酒的油長酒造的獨家技術，加上Amorphous製法的啤酒釀造法，無論是逐漸走近啤酒造法的alpha 8，還是逐漸走近日本酒造法的UNDERWATER，都是新領域的釀造酒。
Alpha 8是使用玄米，精米100%的。上次ver 1玄米佔使用率60%，今次提高至80%。
糠般的香氣，另外還帶點酸味，平淡甘甜中又仿如巨峰提子的清甜。
帶有舒適的氣泡感，平淡的甜味中還有剛好的酸味混雜著殼物的風味。
稍後，少許的苦澀味在口腔內浮現，整過清爽舒適。
因為今次玄米的佔率較上次高，所以焙煎的香氣更強烈，更容易入口，風味更為優雅。

A Nice Treat for Doogies!
