Direct Steam Operation
Requires incoming non-toxic steam at a minimum of 15 psi (103 kPa) with a flow rate of 150 lbs. (68 kg) per hour; a pressure reducing valve is required if incoming pressure exceeds 50 PSI (345 kPa).
Dual Mode Top Compartment
The uppermost cooking compartment features a mode selector switch, allowing operation as either a pressure-less free venting cooker or a pressure cooker at a maximum of 6 psi (41 kPa).
Independent Automatic Controls
Each cooking compartment is independently controlled by an automatic timer with visible and audible signals, enabling simultaneous preparation of different items.
Automatic Cooking Cycle Management
At the conclusion of a cooking cycle, the controls automatically shut off, exhaust incoming steam, drain condensate from the compartment, and sound a continuous signal until manually disengaged.
Robust Stainless Steel Construction
Built entirely from all-welded Type 304 #4 finished stainless steel, including the exterior panels and control housing, for commercial durability and easy cleaning.
Durable & Accessible Doors
Doors feature a removable inner aluminum plate liner with a full perimeter gasket seal, a one-piece welded stainless steel outer liner, and a secure wheel and screw closing mechanism. They latch upon closing and open 15° upon latch release.
Universal Pan Supports
Each cooking compartment comes standard with universal pan supports, providing flexibility for various pan sizes and configurations.
Cabinet Base with Adjustable Legs
Mounted on a 36-inch cabinet base with a full perimeter angle frame, reinforced counter, hinged doors, and four 6-inch stainless steel legs with adjustable flanged feet for secure, floor-mounted installation.
