Their project focuses on crafting dry, unfortified white wines from the indigenous Palomino grape — traditionally associated with Sherry — using biodynamic viticulture, minimal intervention in the cellar, and a deep respect for the region’s limestone “albariza” soils and Atlantic influence. Elixir is a distinctive Moscatel from Sanlúcar de Barrameda. Fermented and aged for several months in used Bordeaux barrels with indigenous yeasts and bottled with minimal sulphur, no filtration and gentle lees contact, Elixir offers exuberant, floral and citrus‑tinged aromatics balanced by refreshing acidity, saline minerality and a long, refined finish that reflects both the Mediterranean and Atlantic influences of its albariza and sandy terroirs.
