DESCRIPTION

This canape is a labour of love. The brioche migas is made by our Pastry Chefs in-house, brushed with olive oil and baked until golden.  Each Migas is topped with whipped ricotta, roasted tomato jam, piment d’ espelette and Cuca anchovy fillets. 

INGREDIENTS

Cuca Anchovy, ricotta cheese, thickened cream, tomato, sherry vinegar, sugar, piment d'Espelette, olive oil, salt and pepper

Brioche: Flour, butter, eggs, yeast, sugar, salt, milk

HEATING/ASSEMBLING INSTRUCTIONS

To assemble the anchovy brioche, dot a little tomato jam on top of the ricotta, using the piping bag provided. Place 1 anchovy fillet provided on top of the ricotta and tomato, bending the fillet in a half moon shape. Sprinkle each canape with a little piment d’espelette and garnish with provided microherbs.
