Ma kombu (真昆布, ma konbu, "true kelp") is regarded as the top grade of Japanese kelp, harvested from the cold seas of southern Hokkaido around Hakodate. Kansai kitchens prize it for a clear, refined dashi, where the thick fronds give sweetness and umami without heavy colour. Glutamate, the compound behind savoury taste, was first identified in kombu dashi by the chemist Kikunae Ikeda in 1908.

What does ma kombu taste like?

On its own, ma kombu dashi is clean and faintly sweet, with a rounded savoury weight that sits under everything you add to it. Less briny than wakame, less smoky than a katsuo stock, it reads as pure umami with a long finish. The thick A-grade fronds give a fuller, sweeter extraction than thinner cooking kombu, which is why Kansai chefs reach for it when the dashi itself is on show.

What is the difference between ma kombu and other kombu?

Ma kombu is the highest-grade kelp, thick and broad, giving a clear and refined dashi with a sweeter, rounder umami. Other grades such as rishiri or hidaka give a sharper or more rustic stock and suit everyday cooking. Use ma kombu when the dashi is the centre of the dish, a clear soup or a delicate simmer, and a cheaper grade when it is a background note.

What temperature should I extract kombu at?

For the cleanest result, steep the kombu in cold water for several hours or overnight, then warm it slowly and lift it out just before the water boils, at around 60 to 80 degrees. Boiling kombu turns the stock cloudy and can draw out a slick, bitter edge. Low and slow keeps the dashi clear and sweet.

How should I store ma kombu?

Keep it sealed in a cool, dry, dark place. Kombu is dried for long keeping, so it holds well as long as it stays dry. Reseal after opening to keep moisture out. A faint white powder on the surface is natural; it is mannitol, a source of the sweetness and umami, and not a fault, so do not wipe it all away before use.

No problems after a year and a half

Have been regularly buying these for my corgi for about a year and a half. The 2 pack lasts about a month or 2 each time. Pieces break off in small enough pieces that they safely pass through his digestive system. He gnaws each one down to about 1/4 the original size before we take it away and give him a new one. He continues to have regular bowel movements and has a healthy appetite so I can’t imagine any problems arising after so long. I have tried other alternatives and every other similar chew breaks off in larger pieces and didn’t feel comfortable letting him chew/eat them. I noticed there are a few 1 star reviews saying their dogs got sick off these but after a year and a half I have had 0 issues with this product. I guess it depends on the dog and how big of pieces they are swallowing. My dog ingests pieces about the size of a grain of rice so just pay attention and you should be fine.

Ok, here's an honest breakdown review. I have a 6 month old Doberman who shreds every stuffed animal and dog bed he's come across. He's one of the worst chewers I've owned. We have tried a WIDE variety of stuffed toys. That said, this elephant is his favorite toy. I have ordered 4 of them so far, and just ordered another 4-pack on a buy three get one free deal. The elephant stands out above all the other stuffed creatures from goDog for me as to durability. Hence why I keep buying more. But they usually last about 2-3 weeks on average. In our house, the poor creatures are subjected to vicious, crazy, shaking of the head, helicopter type rotation. It' so hard if it hits your bare arm or leg it actually stings especially when its wet. Then the old, put it between his legs laying down, tearing at the legs action. The limbs are usually the first things to go over time. But they are each almost self sealing, so you clean up as little fluff and keep using it. Eventually the pup reaches the main body and finishes it off. For a normal light to normal chewer, one of two will get you a long way. For those of us resigned to having zoomie type manic chewers that need a constant supply of toys, 2-3 week durability is pretty sound too. I do not recommend the green cheaper monster. It lasted about 45 minutes. The free replacement took about 3 days. Hopefully this aids you in your decision!

Very durable for rowdy pups

This toy has outlasted any other dog toy I have ever bought. I have one large and one medium dog who share toys, fight over toys, chew them to death and still play with them.
