Manufacturing Process

• Vineyard Location: Located in the Centre of Sicily (Caltanissetta), C.da Cusatino, at $580$ meters above sea-level in lime-clay soils.

• Harvesting: Middle of September, by hand.

• Yield: $100$ quintals per hectare.

• Vinification & Maceration: White vinification process (minimal skin contact to extract colour) in steel tanks at a controlled temperature of 14∘C.

• Malolactic Fermentation: Not held.

• Conservation: In steel tanks at a controlled temperature of 15∘C.

• Bottled Wine Conservation: 16∘C.

Organoleptic Characteristics

• Colour: Clear Rosé.

• Smell: Typical fruit flavours, especially strawberry, rose, and cherry.

• Taste: Very fresh, slightly sour/tangy (sourish), and rich in freshly picked fruit flavours (freshly pickled should be interpreted as fresh fruit notes).

• Food Pairing: Appetizers, strongly flavoured fish, white meat, and generally with delicate food.

• Service Temperature: 10∘C.
