Binchotan (備長炭) takes its name from a merchant named Bichū-ya Chōzaemon, who commercialised the production of oak charcoal in Kishu (present-day Wakayama Prefecture) in the early Edo period. The traditional process fires Ubame oak at temperatures up to 1,000°C, producing a charcoal so dense it rings like metal when struck and burns at temperatures that standard charcoal cannot reach. Why does binchotan cook differently from gas or standard charcoal?

Gas produces convective heat — hot air moving around the protein. Standard charcoal adds flame and smoke to convective heat. Binchotan produces primarily radiant infrared heat from the surface of the charcoal bed, with almost no convective component and minimal smoke. This means the protein cooks from direct surface contact with radiant energy, producing a deep char on the exterior while the interior stays moist. How do I light binchotan briquettes?

Binchotan does not light from a match or lighter. Place briquettes in a chimney starter over a high gas burner, or place directly on the gas ring of a cooker. Allow fifteen to twenty minutes until the surface turns grey-white and the interior glows orange. Do not rush this stage — partially lit binchotan produces carbon monoxide. Always use outdoors or with full extraction running.

Can I reuse binchotan after a session?

Yes. Transfer lit pieces to a binchotan extinguishing pot (hikeshi-tsubo), seal the lid, and the oxygen starvation will extinguish the charcoal without losing the unburnt material. Relight from the same pieces at the next session. Well-managed binchotan lasts significantly longer than standard charcoal for this reason.

What size konro grill does 10kg suit?

A standard half-size konro (approximately 300x180mm) running a dinner service of forty to sixty covers will use roughly two to three kilograms per session. A 10kg box covers three to five full services. For a larger robata station, consumption will be higher; for a compact yakitori counter running lunch only, lower.

So, as other reviewers make clear, this is very similar to Pack Darling and The Beta. It’s much closer aligned with The Beta, in plot and maybe more like Pack Darling with characters. That being said, I don’t hate this…..but it wasn’t great either. It’s both books mentioned but just….less. Less angst, less emotion, less feeling. The plot feels very half fleshed out, and the “bad guy” feels underwhelming. I didn’t really feel any real emotions from and of the male leads, except maybe Oliver. The others fell sorta flat for me. And Mika makes herself out to be this big bad ass straight outta training and then we never see it from here again with the one fitting room incident as the exception. SPOILER: The whole, “Oh, I’m actually probably an Omega, but I don’t wanna be but I do actually wanna be but no one can ever know my secret that I do nothing to hide “ thing fell so flat. She never commutes to believing she was secretly an omega, but also mentions her “secret” a lot. It just felt so manufactured. I’m intrigued enough to read part 2 and see how the author closes everything out, but this is not one I’ll recommend or ever come back to.

Book 1 is about omega Elvana's introduction to the "Starling" brothers and their search for another missing person, Kelly. It's a bit of a rocky start, with deception and betrayal a key element. Hardly an auspicious beginning. Each member has their own path and purpose in the pack. Their interactions and the resulting narrative are so well-written that I found it difficult to put down. There is a cliffhanger that will have you reaching for book 2 as you finish, so make sure you have it on hand.

I'm not really into mafia books but I love Roxy Collin's other series so I decided to give it a try. It had the same great romance, spice, swoon-worthy characters and exciting plot that are her signature. There were almost too many twists/layers of lies to keep track of but I'm looking forward to reading the other books. The only thing that detracted from the story for me was the need for a bit more proofreading. It was mentioned that Kelly is a female and male at different points, leading me to think she changed her mind at some point about the character's gender but didn't go back and edit it to align in all places. Like another reviewer pointed out, step siblings are different than half siblings. They are incorrectly referred to as step siblings because they (allegedly) share the same biological dad. There are a few other typos as well but those aren't a big deal.
