Il Blanc de Morgex et de La Salle Nathan è un vino bianco di montagna, prodotto con uve autoctone Prié Blanc da vecchi ceppi di circa 40 anni. Questo vino si distingue per la sua complessità aromatica e la sua eleganza, offrendo un'esperienza sensoriale unica.

  • Processo: La vendemmia avviene manualmente tra la fine di settembre e l'inizio di ottobre, selezionando accuratamente le uve provenienti da vigneti con ceppi di circa 40 anni. I grappoli non diraspati vengono pressati e macerati a freddo per 48 ore a 5°C, seguiti da una pressatura soffice. La fermentazione avviene in barrique di rovere francese con frequenti batonnage. Dopo un anno in legno, il vino viene assemblato in botti di acciaio inox per un ulteriore anno.
    Affinamento Il vino riposa per un anno in bottiglia, raggiungendo una maturazione ottimale che ne esalta le caratteristiche organolettiche.
  • Caratteristiche: Colore: Il Blanc de Morgex et de La Salle Nathan 2020 presenta un giallo dorato brillante.
    Profumo: Al naso si percepiscono sentori di frutti maturi accompagnati da note di frutta secca, come le albicocche secche.
    Sapore: Al palato, il vino è caldo, morbido e fragrante, con una marcata mineralità e piacevoli note di tostatura.
  • Abbinamenti: Questo vino è estremamente versatile negli abbinamenti. Si sposa perfettamente con tutti i tipi di salumi, formaggi di media stagionatura, scaloppe di foie gras e crostacei. Può accompagnare un pasto completo ed è ideale con carni di coniglio, maiale, carni rosse e cacciagione da piuma.

La Storia della Cantina

1999
La nostra Azienda comincia a muovere i primi passi nell’anno 1999, raccogliendo esperienze di famiglia e i consigli di Marziano Vevey, storico produttore del Blanc de Morgex et de La Salle.  Nel volgere di pochi anni la nostra dimensione cambia e ci affacciamo al mercato estero. I vini prodotti sono tre: oltre al Blanc de Morgex et de La Salle tradizionale, nel 2001 escono Nathan - Blanc de Morgex et de La Salle affinato in barriques e Ninive - vino da uva stramatura.

2010
Nel 2010, in occasione dell’inaugurazione dell’ampliamento della cantina, viene presentato Le 7 Scalinate – Carlo Pavese, un Blanc de Morgex et de La Salle le cui uve provengono da un unico vigneto, in quella zona di terrazzamenti che a Morgex viene definita  “le 7 scalinate”. Il vino è dedicato allo zio Carlo, mancato qualche anno prima, che fin dall’inizio aveva creduto e sostenuto il progetto di Ermes. Nel 2012 esce il primo Metodo Classico “Pavese”.

2017
Anno che sarà ricordato per la mancata produzione del Blanc de Morgex et de La Salle a causa delle gelate del mese di aprile a fronte di una primavera anticipata. Per l’azienda è anche un anno di diversificazione di attività con la nascita dell’azienda agricola Nathan Pavese che affiancherà per qualche anno la produzione vitivinicola.

2020
Anno di forti cambiamenti per tutta la popolazione a causa della pandemia. Per avere una prospettiva positiva, abbiamo terminato i lavori di ristrutturazione della vigna centenaria Le sette Scalinate con l’idea di offrire esperienze di degustazioni esclusive, seguite da Ninive che si unisce alla squadra.

2024
In questi anni abbiamo ampliato la gamma dei nostri vini inserendo l’Esseme, vino in ceramica e l’Esprit fou, vino frizzante col fondo.
L’azienda agricola si fonda con l’azienda vitivinicola facendo nascere Pavese e Figli s.s. agricola

It was repetitive at times as well as struggled with telling not showing. So we didn’t always feel like we were experiencing things with the main character. There were also some plot holes but they may still be answered in part 2. Now this isn’t to be said I didn’t enjoy parts of the story. I loved the almost instant love between Mila and Oliver. And how he started changing around her.
