History
El Vergel Estate’s Red & Yellow Caturra is a flagship coffee. It’s grown in a microlot near the washing station, surrounded by Guava trees. This coffee profile is one of the estate’s most intense and fruity.
In 2016 and 2018, the Bayter Family, who had been growing avocados since 1995, experimented with processing larger coffee lots. They introduced catimore, red, and yellow caturra varieties, which led to the birth of their coffee empire. In 2016, with guidance from coffee expert Miguel Jimenez, they planted specialty coffee varieties, setting the stage for exceptional coffee.
In 2018, they embraced natural coffee processes, experimenting with fermentation control like mad scientists. They also introduced the Koji fermentation process, a game-changer in the green coffee industry.

Process Description
Discover the world of coffee experimentation with our Guava Banana nano batch, a hidden gem within our Guava Banana microlot. This exclusive 282 kg small batch undergoes a Carbonic Maceration (CM) process, using CO2 micro-injections to achieve a precise pH level of 3.8. After this, it undergoes a meticulously crafted 5-step drying process at El Vergel Estate, enhancing the complexity and body of our natural processed coffees. Embark on an extraordinary coffee journey and experience its remarkable results.
Guanábana
They wanted to name this coffee after this fruit, but everyone pronounced it Guava Banana, so thus is the name.
