Crafted in collaboration with our neighbours at Maxwell Wines—Australia’s most iconic mead producers—this single cask release was aged for eight years in an ex-bourbon barrel that had previously held Maxwell’s spiced mead. Wet-filled with new make spirit in 2017, the cask has imparted a beautifully rich and layered profile that speaks to both distilling and winemaking heritage.

On the nose, it’s bourbon-esque and inviting, with notes of dark honey, toasted coconut, nougat, and macadamia cream. The palate is smooth and indulgent, offering white chocolate and fresh honey, before giving way to a finish of cut wood, gentle sweetness, and lingering spice.

This is a whisky that captures the spirit of McLaren Vale—bold, collaborative, and unmistakably local.
