Then depulped & fermented another 36hrs with a culture made of the pulp and

Ripe cherry is sterilised in ozone before a 72hr submerged anaerobic fermentation. Then depulped & fermented another 36hrs with a culture made of the pulp and mucilage. A thermal shock wash follows, locking in flavour, before drying over 34hrs in Diego's Enigma dryer.
