Fontanafredda is een historisch wijnhuis in de Langhe en een groot producent van de prestigieuze Barolo en Barbera. De Barbera druiven voor deze Raimonda zijn afkomstig van de wijnstokken die op de hellingen staan rondom het dorp Serralunga d’Alba op een hoogte tussen de 200 en 400 meter. De wijngaarden zijn op het oosten en westen aangeplant waarbij de bodem bestaat uit een combinatie van klei, kalk en mergel. Hier worden de druiven eind september begin oktober handmatig geoogst. De fermentatie vindt plaats in roestvrijstalen tanks, volgens de traditionele methode, waarbij een vlotter wordt gepompt. Maceratie vindt plaats gedurende 7 tot 8 dagen bij een temperatuur van ongeveer 27 graden, gevolgd door een snelle malolactische fermentatie. De wijnen worden deels gerijpt in grote, Franse en Slavonische eikenhouten vaten, terwijl de rest wordt opgeslagen in kleine vaten (225 en 300 liter) gemaakt van gemiddeld geroosterd Frans en Amerikaans eiken voor ongeveer een jaar. Heerlijk zacht en romig van smaak deze Raimonda Barbera d'Alba Fontanafredda! Zacht geur met kersen confiture, kruidig met een vleugje laurier, zoete rode kersen en bessen en een tikje salmiak. De smaak is betoverend, zalig zo zacht en rond van smaak, mooie indrukken van zwart fruit, pure chocolade, laurier en laurierdrop. Intens met een lange afdronk.
