De druiven komen van 3 Pierres-Plates-percelen midden op de heuvels. Het terroir bestaat uit klei en kalksteen met daarin fossielen van schaal en schelpdieren afkomstig uit de Loire rivier. De druiven worden met de hand geplukt waarna zij alcoholische gisting bij lage temperatuur ondergaan op inheemse gisten.
