Simonnet Fèbvre Chablis 2022 0,375L is een halve fles klassieke Chablis uit het noorden van Bourgogne, gemaakt in de frisse, minerale stijl waar dit gebied zo geliefd om is. De wijn rijpt op roestvrijstaal en op de fijne lies, waardoor hij zijn zuivere fruit, strakke structuur en elegante lengte behoudt. Dit formaat is ideaal wanneer je een mooie witte Bourgogne wilt openen zonder direct een hele fles nodig te hebben.

Wijngaarden en regio

Chablis ligt in het noordelijke deel van Bourgogne en staat bekend om witte wijnen met frisheid, spanning en een herkenbare kalksteenexpressie.

Ligging / Herkomst: De wijn komt uit de appellatie Chablis Village. Wat is Chablis? Chablis is een herkomstgebied in noordelijk Bourgogne waar koele omstandigheden en kalkrijke bodems zorgen voor frisse, minerale witte wijn.

Oppervlakte: Chablis is de grootste appellatie van het gebied, met 2900 hectare wijngaard. De druiven kunnen uit verschillende dorpen, hellingen en vlakker gelegen percelen binnen de appellatie komen.

Bodem: De bodem bestaat uit Kimmeridgien klei en kalksteen. Deze kalkrijke bodem is een van de redenen waarom Chablis zo vaak wordt herkend aan zijn minerale, strakke en bijna zilte karakter.

Wijngaard & Oogst: De wijnstokken zijn gemiddeld 35 jaar oud. Die leeftijd draagt bij aan meer regelmaat in rijping en geeft de wijn extra diepte binnen zijn frisse stijl.

Rendement: Het rendement ligt rond 60 hl/ha. Dat past bij de appellatie Chablis en geeft een wijn waarin frisheid, aromatische zuiverheid en doordrinkbaarheid centraal staan.

Vinificatie en rijping

De vinificatie is gericht op precisie, frisheid en het zuivere karakter van Chablis.

Vergisting: De vergisting vindt plaats in roestvrijstalen tanks bij 16–19 °C. Deze koele, gecontroleerde vergisting helpt om frisse citrus, florale tonen en minerale spanning helder te bewaren.

Rijping / Houtopvoeding: De wijn rijpt 6–10 maanden op roestvrijstaal op de fijne lies. Rijping op de lies geeft extra textuur en lengte, terwijl roestvrijstaal de strakke, pure stijl van Chablis intact houdt.

Bewaarpotentieel: Simonnet-Febvre geeft voor deze Chablis een bewaarpotentieel van 2 tot 5 jaar. Dat past bij de combinatie van frisse zuren, minerale structuur en een korte tot middellange rijpingsfase.

Druivensamenstelling

Deze Chablis wordt volledig gemaakt van het druivenras dat in de appellatie centraal staat.

100% Chardonnay – Chablis: Chardonnay geeft deze wijn zijn citrusfruit, florale aroma’s, fijne structuur en minerale lengte. In Chablis krijgt de druif door het koele klimaat en de kalkrijke bodem een strakkere, frissere expressie dan in veel andere delen van Bourgogne.

Proefnotities en serveertips

In het glas heeft Simonnet Fèbvre Chablis 2022 een heldere, lichtgouden kleur met groene reflecties. De neus is rijk en complex, met subtiele florale tonen, frisse citrus, groene appel, natte steen en een fijne minerale toets. De smaak is strak, elegant en harmonieus, met uitgesproken frisheid en een lange, zuivere afdronk.

Serveertemperatuur: Serveer deze Chablis op 8–10 °C, zodat de frisse citrus, florale tonen en minerale spanning mooi strak blijven.

Gerechten: Past uitstekend bij oesters, schaal en schelpdieren, witvis, sushi, geitenkaas, frisse salades en lichte gerechten met citroen of venkel.

Maison Simonnet-Febvre werd opgericht in 1840 en behoort tot de oudste traditionele huizen van Chablis. Het huis begon historisch met mousserende wijnen en is nog altijd de enige producent in Chablis met een volledige reeks Crémants de Bourgogne. Sinds 2003 hoort Simonnet-Febvre bij Maison Louis Latour, maar het huis blijft als zelfstandige onderneming werken met een eigen stijl, gericht op terroir, puurheid en precisie.

I bought these because I’m finally trying to build a consistent home workout routine and didn't want to drop a fortune on name-brand weights.
