Het zout wordt volledig op ambachtelijke wijze gewonnen met de hand; er wordt alleen beroep gedaan op de zee de zon de wind en mankracht. Het op die manier verkregen zout wordt niet geraffineerd en er worden geen stoffen toegevoegd om het zout te bleken tegen de vochtigheid of tegen klontering. Het zout dankt zijn hoge voedingswaarde aan het feit





Limazout wordt gewonnen in de streek van Olhão aan de Portugese kust in het natuurreservaat 'Ria Formosa'. Het zout wordt volledig op ambachtelijke wijze gewonnen met de hand; er wordt alleen beroep gedaan op de zee de zon de wind en mankracht. Het op die manier verkregen zout wordt niet geraffineerd en er worden geen stoffen toegevoegd om het zout te bleken tegen de vochtigheid of tegen klontering. Het zout dankt zijn hoge voedingswaarde aan het feit dat het bekomen wordt door het zeewater te laten indampen in speciale zoutpannen; zo komen de micronutriënten uit de zee in het zeezout terecht (zo is het ondermeer bron van Calcium en rijk aan Magnesium en lood/iood. Het kwaliteit van dit zout wordt voortdurend gecontroleerd op mineralen en zware metalen. De rijke smaak van natuurlijk zeezout is in niets te vergelijken met de smaak van keukenzout. Niet geraffineerd en toch wit is dat mogelijk? Bij een winning die met zorg en met de hand gebeurt blijft er op de bodem van de zoutpan een dun laagje zout achter dat een natuurlijke bescherming vormt tussen het te winnen zout en de bodem: op die manier behoudt het Limazout zijn witte kleur.
