Deze Chardonnay is fris en aromatisch, met tonen van rijpe appel, perzik en zachte citrus. De wijn is elegant en goed gebalanceerd, met een fijne mineraliteit die refereert aan de bijzondere ondergrond van de wijngaard. De frisse zuurgraad en soepele textuur maken het een toegankelijke en plezierige Chardonnay voor elke gelegenheid.

De AOC Limoux is gelegen in het departement Aude en in de gelijknamige vallei. Het gebied is genoemd naar de centraal gelegen stad Limoux. De streek omvat 42 gemeenten en wordt ingedeeld in vier deelregio's: Autan, Océanique, Haut-Vallée en Méditerranée. De streek stond aanvankelijk bekend om de mooie mousserende wijnen zoals Cremant of Blanquette de Limoux. Vandaag de dag worden er steeds meer stille wijnen gemaakt. Veelal gebruikt men hiervoor Chardonnay, maar ook druivenrassen als Chenin Blanc en Mauzac zijn toegestaan.

Bij Anne de Joyeuse wordt met veel respect voor de natuur gewerkt. Er wordt alleen in het meest noodzakelijke geval gebruik gemaakt van niet-natuurlijke hulpmiddelen. De wijnmakers doen dit vanuit hun overtuiging maar hebben ook geconstateerd dat de druivenstokken er gezonder door zijn geworden.
De grote diversiteit aan ondergronden doet het beste in de Chardonnay-druif naar boven komen. Typische rode klei, krijt en kalksteen zorgen voor een ideale voedingsbodem. De vallei van de Aude is ook beroemd voor zijn vele fossiele overblijfselen die de ondergrond een fijne minerale toets geven. De wijngaarden waar de druiven voor deze wijn staan waren ooit de stille getuige van een unieke vondst. Een bijna intact skelet van een Ampelosaurus werd bovengehaald uit de ondergrond van deze wijngaarden.
