Achtergrondinformatie: "Phelipe Antonio Zarzana Spínola, oprichter van Bodegas Ximénez-Spínola, wordt al in 1752 schriftelijk vermeld. Er staat geschreven dat hij in 1729 een opdracht tot verscheping van wijn heeft gegeven. Geen gebrek aan historie hier! En het bedrijf is nog steeds in handen van dezelfde familie.

De huidige eigenaar, José Antonio, is dan ook een van de meest klassieke Spanjaarden die wij ooit hebben ontmoet. En uitgerekend hij is verantwoordelijk voor een innovatie in het ingedutte Zuid-Spaanse gebied Jerez. 99 procent van alle pedro-ximénezdruiven komt namelijk niet uit Jerez, maar uit buurstreek Montilla. De druiven van Spínola komen wél uit Jerez. Dat is al een onderscheid."
