Het succes van Agusti Torello

Het cava huis werd in 1950 opgericht door Agusti Torello Mata. Het landgoed ligt in Sant Sadurni d’Anoia. Het huis staat bekend om zijn kwaliteitscava’s die enkel en alleen worden gemaakt van lokale druivenrassen. Het huis bezit verschillende wijngaarden rondom het stadje Sant Sadurni d’Anoia in Penedes, wat wordt gezien als de Cava hoofdstad. Er wordt hiervoor extra hard in de wijngaarden gewerkt om gezonde en rijpe druiven te oogsten. Wat geen gemakkelijke klus is. Het is een echt familiebedrijf wat vandaag de dag wordt geleid door de vier kinderen van de oprichter. Ze houden de traditie in stand en blijven dag in dag uit verbeteren waardoor het succes alleen nog maar verder groeit. Daarbij is Torello een van de weinige huizen die Cava’s durft te maken van een jaargang. Typisch voor de cava’s van Torello is dat de mooi droog zijn met een eerlijke stijl.

Het vinificatieproces van Agusti Torello Mata Brut Nature Gran Reserva MAGNUM

De blend bestaande uit 42 procent Macabeu, 22 procent Carello en 36 procent Parellada is afkomstig van oude wijngaarden in de wijnstreek Penedes. Na de oogst vindt er in de wijnmakerij een strenge sortering plaats. Alleen het beste van het beste is goed genoeg. Vervolgens vindt de fermentatie plaats bij een temperatuur van 16 graden voor de duur van 30 dagen. De wijn rijpt op fles met zijn eigen droesem voor de duur van 56 maanden in de wijnkelder van Augusti Torello. Dankzij een lange rijping in de neus geroosterde aroma’s met gebak en wit fruit. Een zeer ronde Cava met een lange afdronk en een fijne bubbel. De Gran Reserva kan goed gecombineerd worden met hoofdrechten met vlees en vis, of bij een kaasplankje met oude kazen.

Great idea, great cover, poor execution

This is a great idea that was badly done. On the production side, insufficient glue in the binding causes pages to fall out when you turn them - dozens of pages, not just one or two. This is surprising given the good quality of the paper and cover. As for content, the writing is very poor & shallow. I'm reminded of a high school essay by poor student unfamiliar with history who is looking looking up the subject matter on Wikipedia as they go but leaving out all the good stuff. For example, we get a king list for Kush spread over several pages, but virtually no actual history -- despite the fact that all of Egypt was there to quote from for at least the enemy's side of the story, and Assyrian sources could have been cited as well. I don't gain much new information from the 50th repetition of "nobody knows this" and "nobody knows that." A real historian can impost structure on the unknowns by showing the archaeology or citing history & folklore & epigraphs. This could have been presented in simple high school language, outlining the alternative possibilities from the little we do know, and explaining how we know what little we know. Photographs of actual ruins and art would help. Unfortunately the subject matter is really not touched. Too bad. This could have been a very good project.
