Tale fenomeno contribuisce a rallentare il processo di maturazione delle uve stesse, concentrandone però i sapori e aumentandone la complessità. Queste caratteristiche si ritrovano tutte nel calice del California Cabernet Sauvignon Diamond Collection - Ivory Label 2013 della Francis Ford Coppola Winery. Riposa un anno in botti di rovere francese. Ha una ricca e complessa personalità.
È da abbinare ai secondi piatti a base di carne. Ottimo con il pollo fritto allamericana.
