Handgeplukt biodynamisch fruit (pinor noir), gedeeltelijk ontsteelt, deels ‘whole cluster’, hele trossen.
Strenge kwaliteitscontrole in wijngaard & kelder.
Gisting start met ‘pied de cuve’ techniek
Pigeage non machinaal uitgevoerd.
Gisting in oudere houten kuipen en cementen cuves.
20 maanden vatrijping in eiken vaten, Bourgogne pièces, geen nieuw hout.
12 maanden flesrijping.
Rijping: 15 tot 18 maanden in oude barrique en in daarna op fles.
