Over Cantine Due Palme

'Cuntamé' vertelt het verhaal van de nieuwe wegen die Cantine Due Palme inslaat. Deze routes leiden recht naar elegantie, resulterend in een strakke, complexe en dynamische wijn. De oogst van 2022 vormt de basis, waarbij enkel de beste percelen van de wijngaard zijn gebruikt. Deze percelen zijn met geduld en toewijding bewerkt om een serie wijnen in beperkte oplage te produceren.

Vinificatie

Na een zachte persing en een kort schilcontact, wordt alleen het vrijgekomen sap gebruikt voor de alcoholische gisting in roestvrijstalen tanks met gecontroleerde temperatuur. De wijn rijpt vervolgens gedurende 5 maanden in stalen tanks, gevolgd door minstens 3 maanden flesrijping.
