Tasting Notes
Red wine with an intense red colour. Complex aroma with notes of integrated wood and spices. On the palate it’s a powerful wine due to its acidity (typical of the variety), with intense red fruit, present but well-polished tannins. Long and persistent finish.
Food Pairing
Goes well with fatty red meat dishes, cabidela rice, Bordeaux lamprey, roast kid. Strong soft cheeses (Serpa, Serra da Estrela).
Vinification
Fermentation in an open granite press with foot treading for 3 hours on the first day. Inoculation of selected yeasts. Periodic pumping over to leach the skins, temperature controlled at 24-25ºC.
Barrel Aging
1 year in 300-litre French oak barrels and 5000-litre used French oak tonneau. 1 year in bottle.
