The two have also been making a Pinot Noir Rosé Sparkling Wine from old vines HAND in HAND since 2013!
The vines grow on the loess/clay soils so typical of the region, which, with their high lime content, are ideal for producing rich, fragrant wines. After selective hand-harvesting of the grapes, approximately 10% of the base wine was fermented in barriques, the remainder in steel tanks. Long 15-month lees aging gives this rosé sparkling wine a wonderfully creamy texture. Ripe sweet cherries and subtle strawberry notes are evident on the nose. On the palate, lively acidity makes this powerful and harmonious Burgundy a pleasure to drink. The Pinot Noir Rosé sparkling wine is wonderfully fresh and elegant.
