It is made from an ensamble of Espadn and Barril agave, combining cultivated and wild varieties to create a balanced, characterful style that reflects traditional community led production. The agaves are roasted in earthen pit ovens, crushed using a horse drawn tahona, naturally fermented and double distilled in copper stills.
