Lion's Mane is a rotating line of the tastiest espresso we can get our hands on. Reserved for smaller espresso-forward drinks in our cafes, Lion's Mane is great with a little milk or straight up!

This particular variety is a single origin from Colombia produced by Felipe Trujillo.

Felipe Trujillo is a pillar of his coffee community and a fourth-generation producer. Finca La Ventolera, named after the fragrant winds that blow through the farm, is nestled up high on Morro Plancho, an incredibly scenic mountain top. Each coffee plant is grown with passion and purpose, and crafted with traditional farming techniques and experimental processing. 

Optimal conditions are met when the cherries are hand-picked by farmers who literally cherry-pick the ripest fruit from each bush. This is how the producer preserves consistent flavor profiles, providing higher quality and guaranteed sweetness. Though La Ventolera farm uses many specialized yeasts and fermentation protocols, this particular yellow Castillo or, "Yellow Colombia" as they call it, is naturally fermented. This means whole coffee cherries dry with the fruit still intact, facilitating the growth of indigenous bacteria and yeasts that disintegrate naturally occurring sugars.
