These "peas" are hulled and then split in half along their natural seam, allowing for quicker cooking and obviating the need for pre-soaking. Split peas are high in protein and fibre, and when cooked completely, they become wonderfully creamy. Lentils are an essential component in vegan and vegetarian diets when protein intake needs to be controlled because only one legume has a greater protein content than lentils: the soybean.
