ZHUATANG

Origine: Cina

Nata intorno al 1300, questa miscela è tra le più antiche al mondo. La leggenda vuole che sia stata creata con l’intento di riunire tutti e cinque i sapori che stanno alla base della teoria dietetica cinese: dolce (cannella), salato (chiodi di garofano), amaro (anice), acido (semi di finocchio), piccante (pepe), e di riequilibrare lo Yin e lo Yang. Nella cucina cinese viene normalmente utilizzata per preparare i cosiddetti cibi “Lu”, un metodo di cottura utilizzato per stufare alcune pietanze, generalmente carni grasse, come maiale e anatra: grazie alla lunga cottura, questi ultimi assorbono al massimo tutti gli aromi. Consigliata anche con il tofu, le zuppe, le verdure saltate e tutti i vari piatti a base di noodles.

Ingredienti: Anice Stellato, Cannella, Pepe Szechuan, Finocchio, Chiodi di Garofano.


CURRY DI MADRAS

Origine: India

Questo Curry è talmente famoso da essere divenuto sinonimo stesso della parola Curry nel mondo. Madras è l’antico nome della città di Chennai, nell’India sud orientale. È un Curry deciso che, a seconda della quantità di peperoncino, può essere più o meno piccante. Il sapore prevalente è quello della curcuma: secco e avvolgente. Seguono, poi, le note speziate e particolari della senape e del pepe, esaltate dalla leggera affumicatura della paprica. Il cardamomo, con il suo aroma floreale, completa la miscela.

Ingredienti: Coriandolo, Curcuma, Finocchio, Sale, Cumino, Aglio, Fieno Greco, Lauro, Chiodi di Garofano, SENAPE, Pepe, Paprica Affumicata, Cardamomo.


CHIMICHURRI

Origine: Argentina

Questa miscela di erbe e spezie nasce in Argentina e si è diffusa in tutto il Sud America e nel Nord Europa. Il sapore e il profumo della cipolla e dell’aglio stimolano l’abbinamento con carne e pesce alla griglia. Si presta alla composizione di marinature con olio extravergine di oliva, cospargendo la carne e facendola riposare per almeno un’ora. Il risultato sarà sorprendente.

Ingredienti: Aglio, Cipolla, Paprica Dolce, Origano, Sale, Prezzemolo, Pepe.

PAIN D’ÉPICES

Origine: Francia

Pain d’Épices è una miscela di spezie nata per insaporire dolci, biscotti, pane, panne cotte, budini e altro ancora. È originaria della cittadina di Colmar, capoluogo dell’Alsazia, nota anche come capitale della produzione del vino alsaziano. Le origini di questa miscela dolce si perdono nella notte dei tempi. Greci e Romani usavano fare pani dolci aromatizzati con miele, ma il più antico antenato del Pain d’Epices così come lo conosciamo oggi lo ritroviamo in un pane al miele insaporito con erbe ed utilizzato come rancio dall’esercito cinese intorno al 1100 d.C.

Ingredienti: Cannella, Anice Stellato, Cardamomo, Coriandolo, Macis, Pimento, Zenzero, Pepe Nero, Chiodi di Garofano.

RAS EL HANOUT

Origine: Marocco

È una miscela di spezie dai profumi caldi e “dolci” e non piccanti, come la cannella, i chiodi di garofano, la noce moscata. Poiché lo si puó considerare un condimento, è facile da usare per marinare le carni, magari mescolato ad un grasso, oppure trasformato in crema da spalmare non solo su carni, pesci o verdure, ma anche su stufati e tajine. Per preparare una crema da spalmare, aggiungete un cucchiaino di Ras el Hanout al burro ammorbidito, alla panna acida o allo yogurt greco; se, invece, desiderate un’emulsione per rendere particolare il vostro pinzimonio, miscelatelo con olio extravergine di oliva.

Ingredienti: Curcuma, Coriandolo, Pimento, Cannella, Peperoncino, Pepe Nero, Cardamomo, Zenzero, Cumino, Finocchio, Noce Moscata, Anice Stellato, Buccia di Arancia, Fieno Greco, Alloro.


CAJUN

Origine: Louisiana

La cucina Cajun è una tipica cucina statunitense nata con gli immigrati francesi dell’Acadia canadese e forzatamente spostati dagli inglesi in Acadiana, regione coloniale dell’odierna Louisiana e di parte del Texas orientale. I cibi Cajun sono caratterizzati da una preparazione semplice e dall’uso di ingredienti rustici. Questa miscela di spezie piccante è molto diffusa negli Stati Uniti ed è adatta a tutti i piatti di carne rossa e selvaggina.

Ingredienti: Sale, Timo, Pepe Nero, Pepe Bianco, Cipolla, Aglio, Paprica Dolce, Zucchero di Canna, Origano, Peperoncino, Noce Moscata, Cumino.

BERBERÉ

Origine: Eritrea, Etiopia

Berberé è il nome di un mix di spezie africane, utilizzato in Eritrea ed Etiopia per la preparazione del celebre piatto nazionale, lo spezzatino zighinì. La miscela include spezie dalle innumerevoli proprietà: cardamomo, peperoncino, zenzero, chiodi di garofano, coriandolo, pimento, ruta comune, ajowan, a volte anche pepe lungo e fieno greco. Esistono essenzialmente due tipi di Berberé: quello con fieno greco e quello con cardamomo. Il Berberé si può usare per speziare innumerevoli cibi e pietanze e per incrementare l’uso delle spezie in cucina, aiutando anche ad eliminare sale e grassi.

Ingredienti: Noce Moscata, Coriandolo, Cardamomo, Pimento, Pepe Nero, Kummel, Pepe della Cayenna, Zenzero, Chiodi di Garofano, Sale, Fieno Greco.


ZA'ATAR

Origine: Libano

Lo Za'atar è un mix di spezie molto popolare nell’area dell’ex impero Ottomano (Libano, Egitto, Turchia, Siria, Israele e Giordania). In Israele è molto di moda, così come in Palestina dove lo ritengono un ingrediente tipico della loro cucina. In Libano i bambini vengono cresciuti a pane e za'atar poiché si crede che esso irrobustisca il corpo e la mente. Molto versatile, lo Za'atar è usato semplicemente mischiato con olio per intingere il pane, i bagel, la pitta o il manakish, una specie di pizza diffusa in tutto il Medioriente; in Palestina viene servito con ceci e olive e si mangia, oltre che come colazione del mattino, anche nello spuntino di metà mattina, servito con hummus; viene aggiunto al labne, yogurt che ha la consistenza di un formaggio; si usa, inoltre, per insaporire carni e verdure. Potete usarlo per condire una pizza alle cipolle o per aromatizzare delle patate stufate; è molto piacevole utilizzarlo come marinata a secco per pollo o agnello ed è gustoso anche su pomodori e mozzarella o sulle uova.

Ingredienti: Sesamo Bianco, Sumac, Timo, Sale, Maggiorana, Coriandolo, Aneto.


MYKONOS

Origine: Grecia

La miscela di erbe Mykonos è stata inventata negli anni ’60. Sembra che uno degli chef dello yacht di Aristotele Onassis, in occasione della prima visita di Jacqueline Kennedy che sarebbe poi diventata moglie dell’armatore greco, preparò questo melange per condire una insalata di carote, cetrioli e pomodori di cui Jacqueline era ghiotta. Gli invitati ne furono così entusiasti che ben presto la ricetta fece il giro del mondo. Questa miscela racchiude in un bouquet aromatico tutti i profumi del mediterraneo. E’ una miscela particolarmente adatta ad insaporire pesci e carni bianche, uova e salse e piatti a base di verdure al vapore e legumi. Ottima anche per marinare carni da cuocere alla griglia.

Ingredienti: Rosmarino, Basilico, Timo, Alloro, Menta, Maggiorana, Origano, Finocchio.


KASKÀ

Origine: Niger, Mali, Ghana

In alcune citazioni del XIII secolo d.C., uno storico siriano di Aleppo nomina il Kaskà in quattro occasioni, abbinandolo sempre al cous cous. Queste citazioni così antiche mostrano che il cous cous, e quindi il Kaskà, si diffusero rapidamente, ma che in generale essi erano comuni soprattutto nell’occidente islamico fino alla Tripolitania, mentre più a est, a partire dalla Cirenaica, la cucina era soprattutto di tipo egiziano per cui il cous cous costituiva solo un piatto occasionale. Uno dei primi riferimenti al Kaskà in Europa settentrionale è in Bretagna, in una lettera datata 12 gennaio 1699, ma già molto tempo prima esso aveva fatto la sua comparsa in Provenza, dove il viaggiatore Jean Jacques Bouchard scriveva di averlo mangiato a Tolone nel 1630. Questa miscela non solo è fondamentale per la preparazione del cous cous al quale va aggiunta durante la cottura, ma risulta un abbinamento felice se accostato al pesce e alle carni di agnello.
