During this time, the vinegar absorbs flavours from the wood and undergoes gradual evaporation, concentrating its flavours and viscosity. La Vecchia Dispensa has been producing balsamic vinegar since 1978, continuing a long-standing tradition in the Modena region, which is famous for its balsamic vinegar production. The company specialises in the production of traditional balsamic vinegar, which is made from cooked grape must (juice) of local varieties like Trebbiano and Lambrusco. This vinegar is aged through a complex and lengthy process that involves ageing in a series of wooden barrels of different types of wood (such as oak, cherry, chestnut) for a minimum of 6 years.
Traditional balsamic vinegar from La Vecchia Dispensa is often used as a condiment to enhance salads, cheeses, grilled meats, desserts, and even as a finishing touch on fruits or ice cream due to its complex and sweet-sour flavour profile.
The quality of La Vecchia Dispensa's products is ensured through adherence to the regulations set by the Consorzio Tutela Aceto Balsamico di Modena, which governs the production and labelling of balsamic vinegar in the Modena region. This certification guarantees authenticity and quality to consumers.
