The BESS (Brubacher Edge Sharpness Scale) standard, developed by Mike Brubacher, provides an accurate measurement of knife sharpness. Adopted widely, this user-friendly test method is trusted to determine the sharpness of blades.
Details
The PT50 Series of Edge-On-Up Sharpness Testers allows you to measure and quantify the sharpness of any tested edge. These systems measure the force in grams required to cut through a standardized and calibrated test medium. The displayed result is a number that indicates the relative sharpness of edges.
To provide more context, a table has been created to show how the score relates to the total BESS scale, ranging from 2000 BESS for an unsharpened knife to 0 BESS for the highest sharpness achievable. Knives with a score below 50 BESS are considered razor sharp. Lower BESS values indicate sharper blades, as less weight is required for cutting.
